I really like the idea of healthy lunch meal prep. There’s something nice about opening the fridge, grabbing your lunch, and knowing you don’t have to throw something together last minute or order takeout (again).

Side Note: To keep this lunch meal prep recipe healthy, make sure the mayo you grab is made with olive oil. The recipe doesn’t call for much, but it does make a difference health-wise! Also, sub out the white rice for brown so you can get those complex carbs.

Side Note: The sauce made for these lunch meal prep burritos uses mayo. It’s only a quarter cup (which isn’t too much), but I’d suggest finding a mayo that’s made with olive oil. It’s much healthier. Also, if you wanna get even healthier, sub out the white rice for brown.
