Princess Diana's Overnight Oats

This healthy, creamy overnight oats recipe was the favorite breakfast of Princess Diana. With oats soaked in freshly squeezed orange juice, grated apple, Greek yogurt, cinnamon, and other delicious ingredients, it's perfect for meal prepping or enjoying as a decadent breakfast.

- 1 cup rolled oats
- 1 cup freshly squeezed orange juice
- 1 cup Greek yogurt
- 1 tbs honey (or to taste)
- 1/4 tsp cinnamon (optional)
- 1/2 honey crisp apple or another red apple variety of your choice
- the juice of one lemon
- 1 cup fresh blueberries
- 1/2 cup toasted walnuts
Squeeze, pour, and mix the fresh orange juice into the oats. This will take about 4-5 oranges.
Once you're don't stirring the juice into the oats, put it in a storage container of your choice and place in the fridge overnight.
Stir in Greek yogurt, honey, lemon juice, and cinnamon.
Grate the apple half into the oats and stir.
Add half of the blueberries and stir into the oats.
Serve in a pretty bowl or cup and top with the rest of the blueberries and toasted walnuts.
Make a coffee to serve with Princess Diana's oats (optional) and enjoy!
